Lemon & Cider Syllabub by Becci O’Reilly, Hereford City Council

I have been involved with the Herefordshire food and drink scene since I can remember.  My parents have a guesthouse where they used to make delicious evening meals from locally sourced ingredients, my Godmother Hilary is part of the Broome Farm dynasty so am lucky enough to regularly taste-test her amazing cider-based cooking, and I was privileged to live my passion and organise the Flavours of Herefordshire Food Festival.  In more recent years since Ross-on-Wye Cider & Perry Co. took over the Yew Tree and Mum and Hilary made the kitchen their domain, I regularly donned my pinny and delivered piled-high plates to the hungry punters.

As a fan of desserts, I thought the best way to share my positive experience with cider is through one of my favourite cider recipes.  Not only is it delicious, it is also super quick and easy!

 

Serves 4, Prep 10 mins

 

Ingredients:

284ml Tub Whipping Cream

50g Caster Sugar

50ml Still Local Cider

Zest and Juice from ½ Lemon

 

Method:

Whip the cream and sugar together until soft peaks form. Stir in the cider, most of the lemon zest and the juice. Spoon into glasses or bowls, sprinkle with the remaining zest and serve with local berries.
